Main Dish

Pea gnocchi with mushroom sauce is a delicate and flavorful dish, perfect for those who like original variations on traditional cuisine. The gnocchi, made with a base of peas and flour (no eggs), are light and have a sweet, vegetable flavor. Their texture goes perfectly with a creamy mushroom sauce, but you can also use porcini mushrooms or a mushroom mixture. Are you ready to try something completely new? Even if you are not an experienced cook, with this simple and intuitive recipe you can prepare a vegetarian first course that will surprise you. Perfect for a dinner with friends or family.

Ingredients

For the pea gnocchi:

  • 10 oz frozen peas
  • 1+2/3 cup flour
  • Olive oil (or a knob of butter)
  • Salt to taste
  • Pepper to taste

For the dressing:

  • 4.5 oz button mushrooms
  • 1/3 cup cream
  • 1 clove of garlic
  • Grated parmesan cheese to taste
  • Pepper to taste

Materials

  • Bowl
  • Frying pan
  • Knife
  • Pastry board
  • Pot

Preparation

Step 1:

Prepare the pea gnocchi: Cook peas in a skillet for 6 minutes over medium heat and season with salt and pepper. Blend, transfer to a bowl, and let the purée cool.

Step 2:

Begin incorporating the flour a little at a time into the bowl, stirring with a fork. When it begins to take shape, transfer to floured work surface.

Step 3:

Incorporate remaining flour and form into a loaf.

Step 4:

Cut the loaf and form into "sausages." Cut the sausages to form gnocchi (the size of the pea gnocchi is your choice).

Step 5:

Prepare the sauce: Clean the button mushrooms and cut them into thin slices. Brown them in a pan with a drizzle of olive oil and a clove of garlic until wilted.

Step 6:

Add cream to pan and cook until thickened.

Step 7:

Meanwhile, cook the pea gnocchi in salted water. They will be ready when they come to the surface.

Step 8:

Transfer the cooked pea gnocchi directly to the pan with the mushroom sauce (we recommend using a skimmer) and stir quickly.

Step 9:

Add grated Parmesan cheese and toss the pasta. Add a little cooking water if necessary.

Step 10:

Pea gnocchi with mushroom sauce are ready!
